Farmer Erin Part II

Erin has really been enjoying her time on the farm. She went twice this week and stayed all day! Our house is starting to fill up with olive oils, balsamic vinegar, and other treats from the farm.  It sounds like they can really use the help, too. And, the farm’s business manager loves to talk as much as Erin – so they are quickly becoming best friends 😉

In other random news…I have really been having fun cooking these past few weeks. I’ve tried a few new dishes including a Mexican lasagna and brown sugar kielbasa with apples and onions. I found the recipe on a blog I read, and we loved it! It’s got a great medley of Fall flavors (my most favorite season!). I made it with baby red potatoes, per a suggestion from my uncle. Next time, however, I think I might make it with a cold potato salad.

The Mexican lasagna was also a big hit with Erin, and our friends Brandy and Chris who stayed with us a few days last week while they were house hunting. I also made it for a friend of mine from grad school whose husband passed away. It’s a really tasty and easy Weight Watchers recipe. And it’s good for mid-week busy-ness. I made it the night before, and heated it up the next day!

Last night, however, I made a favorite from my childhood – my grandma’s recipe for English-ized Indian curry chicken. It’s also very easy. Just yellow curry powder, chicken bullion, onions and garlic. Serve with rice, and top with tomatoes, peanuts, pineapple and raisins as desired.

Looks like I’ll be working most of this long weekend to meet a deadline. As much as I’d love a mellow and relaxing few days, the extra cash will be nice for our impending trip to England in just over three weeks! But, it has been non-stop at work, and getting out of bed this morning was a challenge. And, I still need to post the pictures from the family lunch. Coming soon…
